A single long love letter about flavors captured in forest and land, the realm of wild gastronomy. Acidic, bitter or with a subdued scent of coumarin - from the 250 edible wild plants and mushrooms.
Come along, try to get, cook, eat them. Become part of a highly current cooking art. More important than in a long time in a changing world, where climate and environmental changes remind us of the limits of existence on a round, small earth in the middle of infinite space.
This is how we do it. On the patch of earth we care for.
Lena Engelmark Embertsén, food innovator and chemical engineer. Her curiosity about taste creates products, based on raw materials from her own forest, which have been served at Nobel dinners and the world exhibition in Dubai, among other things.
Ola Engelmark, forest ecologist, multi-user and award-winning author. He has broad research experience which he applies for higher breeding, biological diversity and climate benefits in forests. The magazine Fokus named him Environmental Swede of the Year in 2019.
Fredrik Johnsson, a restaurateur and chef who is passionate about the ingredients. Started and ran Restaurang Volt in Stockholm, received wild Michelin star, 2010 to 2019. He is also chairman of Exceptionell Råvara.
"The book gives tips on preparing food during each other: how about grilled skewers with sauerkraut juice, fir oil and aged cheese? There are facts, suggestions, tables, as well as beautiful drawings of herbs, flowers and berries.” – Per Björgell, BTJ. Overall rating: 4.
"It is very rarely a factual book, cookbook touches, but the carefully worded language, which is founded in extreme knowledge and geekiness, makes me shed a tear. The tone is educational, forgiving and leaves room for your own thought and creativity. Wow, so good!” - Heard Brygga
"A neo-brutalist edition about what can be picked up in the forest and cooked. A practice with talking recipes that imparts an enormous amount of wisdom on everything from how to dry, pick, store to how to roast wild duck with rose hips. And behind the work is a reassuring trio.” – Gastronaut
"A book filled with the joy of discovery and knowledge of what is or can be edible in nature. A truly inspiring and also very beautiful book.” - Swedish Hunting
